Yesterday morning I tried a new twist on our usual waffle recipe and it came up a winner. I took our favorite recipe and added apple. It was easy and tasty and a winner.
These waffles are tasty and easy, but the batter needs a little time to rest, so it's not essentially the quickest waffle recipe, but it's worth the wait, and with proper planning the waiting time is negligible. I typically start the waffle batter first, and while that is resting I will cook a breakfast meat such as bacon or sausage to round out our morning meal, although, truth be told, I've made this for dinner too. I'm sure we're going to have to come up with a chicken and waffle dinner sometime soon. We all know that's a tasty winning combo.
Here is what you will need to create this light, crisp, apple infused waffles.

Ingredients:
3/4 cup all purpose flour
1/4 cup whole wheat flour
1/4 cup corn starch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 teaspoon sugar
1 cup milk
1 tablespoon lemon juice or vinegar
1/3 cup oil
1 egg
1/2 teaspoon vanilla
1 small apple

You will need two bowls, one for your dry ingredients (small) and one for the batter (larger). In your larger bowl add your milk and lemon juice [(or vinegar) You could actually use buttermilk if you have it, but I just make it without the buttermilk, because I don't usually have it in the fridge.] Let that rest while you mix your dry ingredients in the smaller bowl.
In your smaller bowl mix your flour (both wheat and white), corn starch, baking powder, baking soda, salt, and sugar. Stir these ingredient around to combine them well.
Return to your wet ingredient bowl and add your egg, oil and vanilla. Whip this well to combine the egg well into the mixture. Once this is well blended add the dry to the wet, 1/2 at a time. I find that adding it a little bit at a time makes for easier combining and less mess. Now that your batter is mixed. You can peel your apple and grate it into your batter. You can alos choose to add a dash of cinnamon if you like at this point.
At this point you want to let the batter rest for about 30 minutes. This is when I usually make any breakfast meat accompaniment, such as sausage or bacon, and set the table.
Now you can make your waffles. Pour the batter into you waffle iron and cook as directed by your waffle iron manufacturer. There is no need to spray or oil your iron as the batter has oil and they truly don't stick.
Once complete, serve them up pipping hot with your favorite waffle toppings: pure maple syrup, sugar free syrup, peanut butter, Nutella, fresh fruit, jam, the waffle is your oyster.
